A creamy, comforting chicken dish with fresh basil, sun-dried tomatoes, and a luscious cream sauce that will impress anyone.

Ingredients

  • 3 boneless chicken breasts (sliced into 6 cutlets)
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves (finely minced)
  • 1 bunch fresh basil (finely chopped)
  • 1/4 cup sundried tomatoes (sliced)
  • 1/2 cup parmesan cheese (freshly grated)
  • 1/2 cup chicken stock
  • 2 cups heavy cream
  • 1 tsp red crushed pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Combine the Italian seasoning, paprika, garlic powder, and onion powder in a small bowl. Set aside.
  2. Slice the chicken breasts into 6 thin cutlets.
  3. Season both sides of the chicken with salt, pepper, olive oil, and the spice blend.
  4. Heat olive oil in a large skillet. Cook the chicken for about 2 minutes on each side until golden brown. Remove and drain excess grease.
  5. Add butter to the same skillet and scrape up any bits left on the bottom for added flavor.
  6. Stir in minced garlic and red crushed pepper; cook until fragrant (about 20 seconds).
  7. Pour in chicken stock, heavy cream, and parmesan cheese. Bring to a boil, stirring frequently.
  8. Cook for 5-10 minutes until the sauce thickens.
  9. Season the sauce with salt and pepper, then fold in the chopped basil and sun-dried tomatoes.
  10. Return the chicken to the skillet, cover, and cook for an additional 3-5 minutes until fully cooked.

Notes

Serve over creamy pasta or with rice. Add a squeeze of lemon for brightness.
