A delicious dish with chicken thighs in a rich, creamy sauce filled with sun-dried tomatoes and garlic, perfect for special occasions or cozy dinners.

Ingredients

Scale
  • 2 lb chicken thigh fillet
  • 2 tbsp sun-dried tomato oil
  • 2 large cloves garlic (minced)
  • ½ cup sun-dried tomatoes
  • 2 tbsp tomato paste
  • ½ tbsp Italian seasoning
  • 1 tsp dried oregano
  • 1 cup vegetable broth (or chicken broth)
  • 1 cup heavy cream
  • ¼ cup fresh parsley (coarsely chopped)
  • Salt and pepper (to taste)

Instructions

  1. Heat 1 tablespoon of sun-dried tomato oil in a large cast-iron skillet over medium-high heat. Season the chicken thighs with salt and pepper and sauté for 3-4 minutes on each side until golden. Remove from the skillet and set aside.
  2. Lower the heat to low and add the remaining tablespoon of sun-dried tomato oil, along with the minced garlic to the same pan. Sauté for about 1 minute until fragrant.
  3. Pour in the broth to deglaze the pan, scraping up any flavorful browned bits.
  4. Increase the heat to medium. Stir in the heavy cream, Italian seasoning, dried oregano, sun-dried tomatoes, and tomato paste. Mix well.
  5. Return the cooked chicken to the skillet, gently tossing to coat in the sauce.
  6. Once the sauce begins to bubble, reduce the heat to low and let it simmer for about 10 minutes, until the chicken’s internal temperature reaches 165°F (74°C).
  7. Taste and adjust seasoning with salt and pepper as needed.
  8. Finish with chopped fresh parsley and serve immediately.

Notes

For an inviting presentation, serve over rice, mashed potatoes, or pasta. Pair with steamed vegetables or a fresh salad.
