  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup freshly grated parmesan cheese
  • 1 tablespoon minced garlic
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Optional: Fresh basil or red pepper flakes for garnish

Instructions

  1. Begin by patting the chicken thighs dry. Season both sides generously with salt, black pepper, and Italian seasoning.
  2. Heat the olive oil in a large skillet over medium heat. Sear the chicken for about 4-5 minutes on each side until it achieves a beautiful golden brown color. Once done, remove it and set it aside.
  3. In the same skillet, add the minced garlic. Sauté for about 1 minute until fragrant but not burnt.
  4. Lower the heat and stir in the heavy cream, gradually adding the parmesan cheese while stirring continuously until the sauce is smooth and velvety.
  5. Next, mix in the chopped sun-dried tomatoes and let the sauce simmer gently for 2-3 minutes.
  6. Return the seared chicken thighs to the skillet, nestling them into the sauce. Spoon some sauce over the chicken, cover, and let it simmer on low heat for 10-12 minutes. Ensure the chicken reaches an internal temperature of 165°F for safety.
  7. Once cooked, remove from heat, garnish with fresh basil or red pepper flakes, and serve hot alongside your favorite sides.

Notes

For extra depth of flavor, let the chicken marinate in olive oil, salt, pepper, and Italian seasoning for at least 30 minutes before cooking.
