  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tablespoon pesto
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Generously season the chicken breasts with salt, pepper, and garlic powder.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the chicken breasts, searing until golden brown, approximately 4-5 minutes per side.
  5. Remove the chicken from the skillet and set aside.
  6. Toss in the halved cherry tomatoes in the same skillet, cooking until they start to soften.
  7. Pour in the heavy cream and stir in the grated Parmesan cheese and pesto until well combined.
  8. Return the seared chicken to the skillet, ensuring it gets coated in the sauce.
  9. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is fully cooked through.
  10. Garnish with fresh basil before serving. Enjoy!
