A delicious creamy chicken dish with savory sundried tomatoes, perfect for weeknight dinners or special occasions.

Ingredients

  • 1.5 lbs boneless skinless chicken breasts, halved lengthwise
  • 1/2 cup all-purpose flour
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 cup sundried tomatoes, chopped
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Fresh basil leaves, for garnish

Instructions

  1. Season the chicken with salt and pepper, then dredge it in flour, shaking off any excess.
  2. Heat the olive oil and butter in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown, then remove it from the skillet and set aside.
  3. Sauté the minced garlic in the same skillet for about 1 minute until it becomes fragrant.
  4. Add the chicken broth to deglaze the pan, scraping up the browned bits from the bottom.
  5. Reduce the heat to medium-low, then stir in the heavy cream, parmesan cheese, sundried tomatoes, oregano, and red pepper flakes. Let it simmer for 2-3 minutes until the sauce thickens slightly.
  6. Return the chicken to the skillet, coating it in the sauce. Allow it to simmer for another 2-4 minutes until the chicken is cooked through.
  7. Garnish with fresh basil leaves and serve hot.

Notes

Pairs well with garlic bread or a fresh green salad. Can be served over pasta or rice.
