A delightful lasagna featuring layers of creamy cheese, savory chicken, and vibrant spinach, perfect for impressing any guest or family dinner.

  • 9 sheets Pasta Sheets
  • 3 cups Cooked Chicken (Rotisserie chicken)
  • 2 cups Ricotta Cheese
  • 1 cup Mascarpone Cheese
  • 1 cup Sun-Dried Tomatoes
  • 2 cups Spinach
  • 4 cloves Garlic
  • 2 teaspoons Italian Seasoning
  • 2 cups Mozzarella Cheese
  • 1 cup Parmesan Cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté minced garlic in a skillet over medium heat until fragrant, about 1 minute.
  3. Add spinach and sun-dried tomatoes to the skillet, cooking until the spinach wilts; then set aside.
  4. Combine ricotta, mascarpone, Italian seasoning, and cooked chicken in a mixing bowl. Mix until well blended.
  5. Layer three pasta sheets on the bottom of a baking dish.
  6. Add half of the chicken mixture, followed by half of the spinach mix. Sprinkle with mozzarella and a bit of parmesan.
  7. Repeat the layers with the remaining pasta sheets, chicken mixture, and spinach. Finish with a final layer of pasta topped with mozzarella and parmesan.
  8. Cover the dish with foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until golden and bubbly.
  10. Allow to cool slightly before serving.

Notes

For a twist, try using different types of cheeses such as goat cheese or add zucchini slices for extra veggies.
