A delightful twist on traditional breakfast fare, these Sausage French Toast Roll-Ups are filled with savory sausage and enveloped in a sweet cinnamon-vanilla egg mixture.

Ingredients

  • 8 slices of white or whole wheat bread
  • 8 breakfast sausage links
  • 4 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 tablespoon butter (for cooking)
  • Maple syrup (for serving)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Cook the breakfast sausage links according to package instructions until golden and cooked through. Set aside to cool.
  2. Trim the crusts from the bread slices and flatten each slice with a rolling pin to about 1/4 inch thick.
  3. In a shallow bowl, whisk together eggs, milk, vanilla extract, and cinnamon until well combined.
  4. Place a sausage link at one end of a flattened bread slice and roll it tightly. Secure with a toothpick if necessary. Repeat with remaining bread and sausages.
  5. Heat a skillet over medium heat and melt the butter. Dip each rolled sausage in the egg mixture, coating completely.
  6. Place the coated rolls in the skillet and cook until golden brown on all sides, about 3-4 minutes. Remove toothpicks before serving.
  7. Serve warm, drizzled with maple syrup and optionally dusted with powdered sugar.

Notes

Feel free to experiment with different types of bread or flavored sausages. To store leftovers, keep in an airtight container in the refrigerator for 2-3 days.
