  • 1 cup strawberries, chopped
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the cottage cheese, sugar, vegetable oil, eggs, and vanilla extract in a large bowl. Mix until well blended.
  3. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix!
  5. Fold in the chopped strawberries gently.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake in your preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let them cool slightly before enjoying!
