A nutritious and comforting breakfast bake combining quinoa, blueberries, and warm spices, perfect for busy mornings or family brunches.

  • 1 cup quinoa, rinsed
  • 2 cups almond milk
  • 1 cup blueberries, fresh or frozen
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the rinsed quinoa and almond milk in a medium pot. Bring to a boil, then reduce the heat to a simmer. Let it cook for about 15 minutes or until the quinoa absorbs all the liquid.
  3. Mix the cooked quinoa with blueberries, honey or maple syrup, vanilla extract, cinnamon, and salt in a large bowl until everything is well incorporated.
  4. Pour the mixture into a greased baking dish, spreading it evenly.
  5. Sprinkle nuts on top for added texture if desired.
  6. Bake in the oven for 30-35 minutes or until the mixture is set and lightly golden on top.
  7. Allow it to cool slightly before serving.

Notes

For added flavor, mix in some nutmeg or lemon zest. Adjust the sweetness with honey or syrup according to your taste.
