A creamy, savory chicken dish with sun-dried tomatoes and sweet corn, perfect for impressing guests or enjoying a comforting weeknight meal.

  • 4 chicken breasts (boneless and skinless)
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 1/2 cups chicken broth
  • 3 tablespoons cornstarch
  • 1 cup heavy cream
  • 4 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon paprika
  • 1/2 cup sundried tomatoes (drained and chopped)
  • 1 cup sweet corn
  • 1/2 cup parmesan cheese (freshly grated)
  • A few basil leaves (chopped)

Instructions

  1. Combine the salt, garlic powder, onion powder, paprika, and black pepper in a small bowl.
  2. Pat the chicken breasts dry using paper towels and season both sides with the dry rub mixture.
  3. Heat olive oil and butter in a large skillet over medium-high heat.
  4. Cook the chicken breasts until golden brown on both sides, about 5-7 minutes and remove from skillet.
  5. Whisk together chicken broth and cornstarch until smooth in a medium bowl.
  6. Pour the cornstarch slurry into the bottom of an 8-quart slow cooker.
  7. Add heavy cream, minced garlic, Italian seasoning, salt, black pepper, red pepper flakes, and paprika to the slow cooker.
  8. Place the seared chicken into the slow cooker along with any juices from the skillet.
  9. Top with sun-dried tomatoes and sweet corn, then cover and cook on low for 6-7 hours or high for 3-4 hours.
  10. Transfer cooked chicken to a plate, add parmesan cheese to the sauce, and stir.
  11. Return chicken to the slow cooker, coat with the sauce, and sprinkle with fresh basil before serving.
